When the century-old traditional braising technique meets an intelligent production line, how can traditional delicacies achieve industrialization? According to the Leshan Taste Food and Beverage Industry Park, the Ji Liuniang Food Intelligent Production and Cold Chain Storage Project officially commenced operations in May this year. The project features a 100,000-grade clean room and an intelligent production line, which, while preserving the traditional techniques of sweet skin duck, has increased daily production capacity to 10,000 ducks, paving a new path for the industrial development of Leshan's specialty food industry.
The traditional flavor of a modern factory
Upon entering the Ji Liuniang production base within the industrial park, the 5800 square meter standardized factory stands out in the sunlight. Inside, the factory is scientifically divided into areas for brine preparation, drying, and outer packaging. Modern equipment, including cleaning machines, steam jacketed pots, and intelligent frying devices, operates efficiently. Workers, dressed in sterile uniforms, skillfully operate on the conveyor belts, while the air in the ten-thousand-grade clean room is filled with the mingled scents of brine and sweetness.
Our production line has been upgraded with intelligent technology while preserving the traditional brine recipes and curing techniques passed down through generations. Song Li, the project owner and the third-generation inheritor of the intangible cultural heritage, pointed to the steam jacketed pot and explained that the traditional natural gas heating for the brining process is now handled by a constant-temperature steam system, which improves heat distribution and reduces energy consumption. The intelligent burner used in the frying process ensures higher precision in oil temperature control, guaranteeing that each duck's skin achieves the traditional golden, crispy texture.
The whole industrial chain builds a new benchmark for production capacity
According to reports, the project has a total investment of 65 million yuan. It includes the construction of a foam cleaning station and a cold chain storage system, which ensures comprehensive hygiene control throughout the process from raw material cleaning to finished product storage. Notably, the company has established a closed-loop supply chain for its 300,000 'white duck' breeding base in Wutongqiao District, ensuring quality control from duckling selection to slaughter and processing.
Our daily production capacity has now reached 10,000 units," Song Li admitted frankly. Such a production volume was unimaginable in the traditional workshop era. Data shows that this production line is twice as efficient as traditional methods, and the product qualification rate has consistently remained at 100%. Currently, the company has 80 chain stores across Sichuan, and the opening of a new franchise in Zhengzhou, Henan in June marks the beginning of the brand's expansion into other regions.
The dual-wheel drive strategy of intangible cultural heritage brands
In the live streaming room of the production base, a variety of live streaming equipment has been installed, facilitating online live streaming. "While we have opened official flagship stores on Tmall and JD.com, we have also boosted our online orders through live streaming sales. During the 'Walking with Hui' Sichuan live streaming event, we sold sweet skin duck online, achieving over one million yuan in a single session." Song Li revealed that the company is developing a dual-driven model combining offline chain stores with online e-commerce, aiming to expand to 150 stores by the end of 2025, achieve an annual sales volume of 150 million yuan, and create over 100 job opportunities.
As the preparation and expansion of direct-operated stores and franchise stores in Guangdong, Zhejiang, Jiangsu, and Hainan advance, Ji Liuniang is leveraging industrial production to transcend geographical boundaries and promote 'Leshan Flavors.'
